In the heart of Genoa, this hotel occupies a restored 17th-century palace owned by the Durazzo family for over 400 years. This boutique hotel with just 15 rooms opened in September 2023 in the heart of Paris as a project by the Chopard jewelry house. The 18th-century building underwent meticulous restoration under the guidance of designer Pierre-Yves Rochon. Luxurious materials, such as wallpapers by Les Ateliers Philippe Coudray and murals by L’Atelier Mériguet Carrère, emphasize the historical significance of the space while infusing it with Parisian sophistication.

Located in the picturesque English village of Southrop, Thyme opened in 2020 and was created by the Hibbert family. The owners aimed to craft not just a hotel but a "village within a village." The complex comprises restored 17th-century buildings, including private cottages and farms. A standout feature of Thyme is its stunning garden, which spans the entire property and supplies flowers and herbs for decorating interiors and preparing dishes in the on-site restaurant.
